Super Fluffy Cinnamon Walnut Banana Bread

Wet Ingredients
4 very ripe bananas
½ cup melted butter (or coconut oil)
¾ cup brown sugar
2 tablespoons white sugar
2 large eggs, room temp
1½ teaspoons vanilla extract
3 tablespoons milk
Dry Ingredients
1½ cups all-purpose flour
¾ teaspoon baking soda
¾ teaspoon baking powder
¾ teaspoon salt
1 teaspoon cinnamon
¾ cup chopped walnuts
š„ Oven Setup
Preheat oven to 350°F
Grease or parchment-line a 9x5 loaf pan

1ļøā£ Mix Wet
Mash bananas until mostly smooth
Stir in melted butter
Mix in sugars
Add eggs, vanilla, and milk
Stir until glossy and combined
2ļøā£ Mix Dry Separately
Whisk together:
Flour
Baking soda
Baking powder
Salt
Cinnamon
3ļøā£ Combine
Gently fold dry into wet
Mix just until flour disappears

Fold in walnuts last.

Pour into loaf pan
Optional: sprinkle extra walnuts + pinch brown sugar or cinnamon sugar on top
Bake:
ā° 55ā65 minutes
ā Toothpick should come out with moist crumbs
ā Top should be golden and slightly domed
If browning too fast around 45 minutes, loosely tent with foil.

Let cool in pan 15ā20 minutes, then transfer to rack.
If you slice too early, it can seem gummy ā patience = fluffy slices.
