Super Fluffy Cinnamon Walnut Banana Bread

🧺 Ingredients

Wet Ingredients

  • 4 very ripe bananas

  • ½ cup melted butterĀ (or coconut oil)

  • ¾ cup brown sugar

  • 2 tablespoons white sugar

  • 2 large eggs, room temp

  • 1½ teaspoons vanilla extract

  • 3 tablespoons milk

Dry Ingredients

  • 1½ cups all-purpose flour

  • ¾ teaspoon baking soda

  • ¾ teaspoon baking powder

  • ¾ teaspoon salt

  • 1 teaspoon cinnamon

  • ¾ cup chopped walnuts

  • Preheat oven to 350°F

  • Grease or parchment-line a 9x5 loaf pan

  • Mash bananas until mostly smooth

  • Stir in melted butter

  • Mix in sugars

  • Add eggs, vanilla, and milk

  • Stir until glossy and combined

Whisk together:

  • Flour

  • Baking soda

  • Baking powder

  • Salt

  • Cinnamon

  • Gently fold dry into wet

  • Mix just until flour disappears

Fold in walnuts last.

Bake:
